With the help of "Bruce" through a comment on this post we have modified the Pay History tool to provide a way for employees to see pay information from the previous year. To use this navigate to myPortal - Employee Resources - Employee Pay History.
There is a parameter for the report which reads "Days Back" - select the option from this list and click update. The pay items from the previous year will be displayed on the page.
